Last but not least… Kassy grew up in Arkansas and worked in the media industry for years with the Arkansas Times, Cap Media and Advantage Publishing. Her husband’s job with Ryerson brought them to the Ark-La-Tex 16 years ago. While she officially joined the team in 2018, she’s been a part of the Sainte Terre family from the beginning. Kassy and her husband Darren are long-time friends of Derek and Holly’s and they remember the night Derek rolled out the original plans for Sainte Terre across their kitchen island. It’s likely that Kassy has played a role in your first impression of Sainte Terre. As our Marketing and Brand Manager, she’s designed our websites and runs our social media accounts. She loves to tour new couples around the venue and kick off their wedding planning process in our Initial Planning Meetings and she’s also spent lots of time in the kitchen with Holly! In fact, if you’ve attended a Sainte Terre wedding or two you’ve probably met some of her family. Her husband Darren helps out behind the bar from time to time and Sainte Terre was the first job for both of their kids. Their oldest son Kaleb worked as a server from the very first wedding in 2014 until moving to Monroe and completing his Marketing Degree at ULM. Their daughter Hannah has helped out as a server, food stylist, and floral designer. She’s now a freshman at ULM. MEET ZAC...SAINTE TERRE ESTATE'S OPERATIONS MANAGER! Zac is kind-hearted and funny and we've literally known him since he was a kid. He's been a part of our event staff for years and has served Sainte Terre as a parking attendant, server, bartender, and more. He's also been a groom, best man, and groomsman, so he brings quite a unique perspective to the team! Along with helping to maintain the grounds of a 60-acre estate, he and Derek work together behind the scenes to ensure every event is seamless, and the guest experience is spot-on. To know him is to love him!🤍

MEET CASEY ... SAINTE TERRE'S NEW ESTATE CHEF! Casey joined our team in September and we are so excited to announce his arrival. Holly has been searching for the past year to find a chef with just the right talent, temperament and creativity to join her. (As you can imagine, she is pretty picky about who she works with in the kitchen!) He's honed his skills and gained a wealth of experience by working with some of the top chefs in the Louisiana food scene. He's also the co-founder (with his twin brother, Nick) of Twin Bagel! Holly and Casey will be leading a brand new kitchen staff that will be preparing the menus for both Sainte Terre and The Stables. We are so lucky she has decided to make this transition. She truly understands the work and commitment it takes to make sure our couples and their families have a truly stress-free experience from start to finish. Kelsey and Hillary will be sharing planning and coordinating roles at both Sainte Terre and The Stables to make sure each and every wedding is perfect! Hillary is the creative force behind every Sainte Terre wedding. We often say she has a 6th sense when it comes to knowing exactly how to bring each couple's style and wedding dreams to life. Her work has been featured in The Knot, Junebug Weddings, Southern Living, Modern Weddings, Style Me Pretty and Rustic Wedding Chic just to name a few! Here are a few more things you may not know about Hillary... 1. After graduating from ACU with a degree in Nutrition and Dietetics, she moved to New Orleans with a position in the pediatric wing at East Jefferson Hospital. While in New Orleans, she discovered that pull to all things design she had considered more of a hobby, was actually a real passion. And as they say, "The rest is history." 2. Hillary is married to Colby Moss, a Bossier City Fireman. We're biased, but their gender reveal was the best ever! Sweet Maclane is already 3 years old. 🤗 3. Hillary is the BIGGEST Packers fan! She gets it honest (note the 3 generations that traveled to Lambeau Field) and has been teaching Maclane to cheer on the Packers, too. 🧀 4. A true designer at heart, she also loves remodeling homes. She and Colby have lovingly renovated their home on Cypress Lake. It's a beauty! 5. If you haven't met Derek yet, you should! He is THE Hospitality powerhouse behind everything we do at Sainte Terre. Not many people know how extensive his background is - and how passionate he is about making sure every detail of service is on-point for not only our couples, but our guests as well. Here are 5 things you may not know about him… 1. Derek was the CFO of The French Culinary Institute in Manhattan when he and Holly first met. He had lived in Manhattan and worked in the hospitality world for 16 years before making the big move down to, of all places, Benton, LA. 2. Speaking of Hospitality, Derek had an amazing career prior to heading down South. He was Regional Controller for Planet Hollywood's East Coast (and yes, he knows Bruce, Demi, Sylvester AND Arnold). He later was CFO for the Concerted Hospitality Management Group which owned both the Les Halles and Le Marais Restaurants in NYC and Miami (and yes, he also knew Anthony Bourdain). He's screened movies at Quentin Tarantino's apartment and hung out with the Spice Girls...he was even invited to a Backstreet Boy's wedding! 3. After his time with Concerted Hospitality, Derek and Les Halles' Chef de Cuisine Cyrille Fancello teamed up and created a creperie food truck (way before food trucks were cool)! They traveled the country to some of the most coveted events and eventually opened a brick and mortar creperie, La Flambeé, in Keystone Village at the base of Keystone Mountain in Colorado! 4. Derek is a HUGE sports fan - don't mess with his Giants, Yankees, or Rangers (NY)! He played rugby and baseball while in college at Ithaca in upstate NY and is an avid golfer as well. 5. He and Holly just celebrated their 15th wedding anniversary and playing with their daughter Birdie, tops the list of his favorite things. No contest! 🤗

As we kick off our re-introduction of the Sainte Terre team, and our announcement of our newest team members, we can't help but start with Owner and Executive Chef, Holly Schreiber. The concept, design and heart behind Sainte Terre all started with her! Here are 5 things you may (or may not) know about Holly: 1. Holly grew up in Benton, and has a degree in Nutrition and Dietetics from TCU, and a Grand Diploma in the Culinary Arts from The French Culinary Institute in NYC. She has been a professional chef for nearly 20 years. 2. While living in NYC, she owned a Culinary Media company (Pastiche) and specialized in recipe development, testing and food styling. Her clients included Country Living Magazine, Chef Alain Ducasse, Katie Brown Workshop, the Mexican Hass Avocado Board, Coolio (RIP), Mrs. Kay from Duck Dynasty, and many, many more. She even developed content for Kroger Grocery Store Co.'s first in-store broadcast culinary network. Her recipes have been published in numerous magazines, newspapers and cookbooks. 3. After moving back home, she fell in love with a small community kitchen that was housed at the Airline Drive Church of Christ. She soon took over operations and grew it into the Shared Harvest Community Kitchen, feeding 100's of local families in need. She still works with Sainte Terre couples to donate their wedding day leftovers to a local meals on wheels program if they would like to! 4. Since opening Sainte Terre, Holly has been named Country Road Magazine's Best Small Town Chef and a Chef to Watch for Louisiana Cookin Magazine. 5. She has an adorably sweet 4-year-old named Birdie Valentine... and she just turned 40!
